I am constantly searching for things that I can make ahead, freeze, and grab them to take to work with me in my lunch bag that is
1) easy
2) yummy after nuking in the microwave
3) relatively healthy
This recipe really fits the Bill. This base recipe is very easy to adapt to suit your own tastes. I wrapped each one in a paper towel and froze them in ziplock/foodsaver bags in groups of 5. I got 15 burritos from this recipe. Don't forget the sour cream and salsa, YUM!!!!
Veggie Burrito Wraps

Ingredients
2 cups uncooked brown rice
4 cups water
olive oil
1 green pepper
1 onion
2 tbsp brown sugar
2 (15 ounce) cans black beans
2 (15.5 ounce) cans pinto beans
1 (10 ounce) can whole kernel corn (I used mexicorn)
1 (10 ounce) can diced tomatoes and green
chiles (a.k.a. Rotel tomatoes)
1 can low fat refried beans
16 (10 inch) flour tortillas
2 cups shredded pepperjack cheese
Directions:
1. Combine rice and water in a saucepan, and bring to a boil. Reduce heat to low, cover, and simmer for 35 to 40 minutes, or until tender. Remove from heat, and cool.
2. Place black beans and pinto beans into a colander or strainer, and rinse. Add corn and diced tomatoes with green chilies, and toss to mix.
3. In a large skillet, heat two turns of olive oil over medium high heat. Add onions, peppers and brown sugar, saute for 3-5 minutes or until caramelized. slowly add in the corn and tomato mixture and stir to heat thoroughly. add cheese and rice and stir until thoroughly heated and cheese is melted.
4. Divide the mixture evenly among the tortillas, starting with a layer of refried beans, and roll up. Wrap individually in paper towels, place into a large freezer bag, and freeze. Reheat as needed in the microwave for lunch or snacks.

2. Complete list of ingredients in my burrito: whole wheat tortilla + vegetarian ground round (faux meat) + rice + refried beans + cheese + salsa + guacamole + lettuce + tomatoes + green peppers + green onions + jalapenos + sour cream + burrito sauce + hot sauce
3. This vegetarian burrito was indeed satisfying/filling, but I can't say that it was the best burrito I ever had. Though all the ingredients tasted fresh, there was nothing particularly magical about this burrito.

* I n g r e d i e n t s *
2 cups Sprouted Sunflower Seeds (soaked in water for 24-48 hours, then strained)
1 cup Shelled Hemp Seeds
3 Carrots, roughly chopped
2 Garlic Cloves
1 bunch Dill, roughly torn into smaller pieces
1 bunch Collard Greens
3 stalks of Celery, roughly chopped
Sea Salt (to taste)
Lime Juice (to taste)
* P r e p a r a t i o n *
1) YOU WILL MOST LIKELY NEED to combine all of these ingredients into your food processor in STAGES, as otherwise you'll clog up the food processor like I did! Combine the sprouted sunflower seeds, shelled hemp seeds, chopped carrots, garlic cloves, dill, just the STEMS from the collard greens & the chopped celery stalks using a food processor. 2) Add sea salt & lime juice to taste, and blend some more.
3) Scoop mixture into the collard green leaves, roll up into a "burrito," and enjoy! OR scoop mixture on top of collard green leaves and serve as an open-faced "burger" OR
serve mixture as a veggie dip alongside chopped vegetables OR
serve however you'd like...be creative!

I encourage you to play with your food and be creative in the kitchen! It is OK to make mistakes! It is OK to not have everything turn out perfectly all the time! I actually am ALWAYS fiddling with food that I prepare like I do in this vid, it is just part of the process! I only said I was frustrated because I felt frustrated for you guys having to watch me having to fiddle...so I otherwise wasn't actually frustrated at all!
So again, don't be afraid...play with your food while making new recipes and have fun!
